
Settebello Napoletana Pizzeria – Henderson, NV
Picking up my first two pies from Settebello and noticing that they are definitely on the small side, 12 inches edge to edge. For $13.00, I would have expected a 12″ having a little less than 1 1/2″ of edge crust. The crust although one of the best tasting crusts not coming out of a coal-fired oven, was paper-thin but not crispy in the least. A sure sign of being under-cooked. For them supposedly being such great Neopolitan pizza, they good take the sauce and toppings a little farther out. As you can see by the picture, the “Settebello” has very little toppings to speak of. Supposed to be a “Sausage & Mushroom” but not really. Stickly crushed tomatoes instead of the normal sauce. It is pretty much a tomato pie. The tomatoes out-shadow the other topping due to the scarcity of the topping. If there were more, as in most every other pie from any other pizzeria, the tastes would complement each other great.

Next was their “Margharita” and it is pretty much what I expected except again, lack of toppings. A 12″ pie should have more than 2 very small Basil leaves and half of the pie should not have 2+” of crust edge. This was terrible. Half of the pie was so under-cheesed, it tasted like tomato soup. This was a very poor attempt at a pie with only one major topping and they 18yr old prep cooks failed miserably. Again, the paper-thin crust was as flimsy as a sheet of paper. How hard is it to crisp a thin crust pizza?
I really have no idea how this place came in 2nd on the top 5 Best Pizzas in Las Vegas via the scientific data received from Zagat, Gayot, Yelp, Urbanspoon and others. This visit would not even rate in the Top 10 of Las Vegas Pizza joints.
